Composition: Blend made on the basis of wines from the 2002 harvest with about 20% reserve wines from the previous two years. - 44% Chardonnay from the Côte des Blancs (Avize, Mesnil and Vertus) - 56% Pinot Noir from the Montagne de Reims (Verzenay, Sillery) of which 19% vinified in red.

Visual Appearance: Coral pink color, rose petal supported. Very fine bubbles, fine and tenacious cord

Olfactory Description: A fine, subtle and fresh nose, dominated by aromas of cherry and red berries: wild strawberries and raspberries. A very nice olfactory intensity on primary aromas little evolved and very fresh.

Description of Gustatif: A beautiful attack in the mouth, balanced and of a good freshness. A wine of great elegance. A beautiful wine, fine, supple, round and silky with fruity and gourmet notes. A finish of medium length (5 to 6 caudalies).

Food - Wine pairings: A wine of great conviviality that we will enjoy offering and sharing. An ideal cuvée for an aperitif in the evening. At the table it goes very well as a starter with a delicate and fine raw ham (Parma, Bayonne ...), a beef carpaccio, a salmon tartare or a tomato gazpacho. A "raw" fish such as semi-cooked tuna or sea trout can also perfectly accompany it. In Japanese cuisine we can offer a bluefin tuna sashimi. With the main course it goes perfectly with a leg of suckling lamb from Pauillac, and for dessert it will express itself fully with a red fruit soup.
