From a unique soil, all our vines are located in the commune of Saint-Jean-de-Minervois, one of the smallest appellations in France. The soil is very chalky, very mineral and at altitude. TERROIR
The 17 hectares of vines are located on a lacustrine limestone plateau, at an altitude of 280 to 300 metres, in Saint-Jean-de-Minervois (40 km north of Narbonne). The soil is very stony and shallow, which brings a lot of minerality and freshness to our wines.
WINE MAKING
The vines are over 25 years old and are goblet pruned. No irrigation. Harvested by hand. The wine is vinified at very low temperature, followed by a short maturation in stainless steel tanks.
TASTING
The colour is pale yellow with golden reflections. The nose is delicate, with citrus and floral notes. In the mouth, the attack is fresh, followed by notes of citrus and exotic fruits. An aromatic wine with a lot of finesse!
FOOD & WINE PAIRING
Delicious as an aperitif, on a cheese platter or with green vegetable, white fish or poultry dishes.
