ELABORATION
Natural sweet wine. For the elaboration of this wine, all the details have been taken care of, starting with the harvest in boxes of the ripe grape, racking of the must for 4 days, subsequent racking and starting of fermentation at a very low temperature.
GRAPE VARIETIES
Muscat of small grain.
Area: AOC Saint Jean de Minervois.
SENSORY ANALYSIS
Appearance: Straw yellow. Clean and bright.
Nose: Honey and citrus. It marks intensely and directly the typicity of the aroma of muscat. of petit grain.
Palate: Tasty and unctuous. Sweet, with a counterpoint of acid touches that gives a great balance to this wine.
RECOMMENDATIONS
(13C-14C) up to 8% alcohol. Fermentation is stopped with the addition of wine alcohol up to 15%. More than half of the alcohol in this natural sweet wine comes from fermentation; and all the sugar (120 g/l) of the grape itself.
