Welcome to the kingdom of Cornicabra olive oil. At Oli Oli Biodinámico we harvest our cornicabra olives at their optimum point of maturation or pre-ripening; In this way, Gonzalo Pin, our oil mill master, is able to produce an organic extra virgin olive oil rich in phenols.
Oli Oli cornicabra extra virgin olive oil is 100% organic and is characterized by having a green and intense fruitiness, it presents very characteristic descriptors such as vegetable notes of artichoke, asparagus and arugula; That is why it is so easy to find the differences between the Arbequina, Picual and Cornicabra varieties, other monovarietals that we also produce sustainably and in perfect harmony with our environment.

Tasting notes
We might call this our “Kingdom of Cornicabra” as this varietal takes on its highest dimension, superior complexity, harmony and persistence.
Cornicabra’s frutiness is marked by leafy vegetable notes; to imagine its intensity think of children anxiously waiting at the schoolroom door to be let out for recess on a rainy day… boisterous aromas of green tomato plant, artichoke skipping along with green asparagus, a touch of distracted arugula, and delicate hints of herbs quietly sitting in the corner.
Once the door is open, out comes a Mediterranean caress, its faint sweetness gives way to bitterness… characteristic of this variety, a sign of premium elaboration, it surrounds you with fresh spring rain, letting in a medium pungency.
Its persistence, encouraged by the urge to keep tasting it, brings a complex herbal retronasal with echoes of green nuts.
From the first contact, it brings to mind roasts, stews, grants personality to creamy soups, mashed potato or squash, and is the perfect accompaniment for every kind of roasted vegetable.
