One of the key points for the elaboration of this product is the selection of the grapes. The must obtained after a gentle crushing of the grapes is macerated with the skins of the grapes and extinguished with the addition of wine alcohol. The sweet wine obtained is aged in 500 l barrels, making before bottling a coupage of several vintages. The result is a unique and personal wine.

WINEMAKING

One of the key points during the elaboration of this product is the selection of grapes. After gently pressing the grapes, the resulting juice is macerated with the grape's skin. Fermentation is prevented by adding wine alcohol. The final sweet wine ages in 500L barrels. Each bottling is a blend of different vintages. A personal and unique wine is the result.

TASTING NOTES

Colour: Dark red cherry.

Nose: Intense and delicate aroma with notable reminiscence to raisins, dry figs, blackberry and balsamic hues.

Mouth: Gentle entry, confectionary but with an intriguing acidity. Complex, suggestive and wide development with nice intensity and log aftertaste.

FOOD PAIRING

Appetizers, foie, pâté, blue cheese, bitter chocolate and pastries. Perfect choice to start and finish a meal.
